Khichu (Steamed Rice Dumplings)

One of my favorite comfort foods that is vegan, gluten free and Jain friendly. Such a simple recipe.

Ingredients

  • 2 cups water
  • 1 cup rice flour
  • 1-2 green chilies diced
  • 1 tsp cumin
  • 1 tsp Eno Fruit Salt
  • 1 tsp salt
  • 1 tbsp oil
  • 1 tsp achar masala

Instructions

  • Boil 2 cups of water.
  • Add in cumin, salt, ENO, green chilies and rice flour.
  • Mix well on low flame until there are no lumps.
  • Grease a stainless steel pan and add in the khichu mixture.
  • Put the pan in the Instant Pot on High Pressure mode for 10 minutes.
  • Drizzle olive oil and achar masala.

Notes

You can use a pressure cooker or steamer if you do not have an Instant Pot. Achar masala can be found at the Indian grocery store. This dish is usually served during breakfast with hot masala tea.
