Ghes (Rice Porridge)
Ghes is a popular Gujarati rice porridge that my grandmother passed down to my mom and aunts. It is a comfort dish that is simple and filling.
Ingredients
- 1 cup basmati rice
- 4 cups water for ghes
- 2 cups dahi
- 1 tbsp ghee clarified butter
- salt to taste
Instructions
- Wash rice in water a few times until the water is clear. Soak rice in water for at least 30 minutes.
- Use a pressure cooker/ rice cooker/ instant pot/ stove top to cook rice.
- On low heat, using a deep, non-stick pan, add cooked rice with water, dahi and salt. Mix well.
- Use an immersion blender to help break down the rice.
- On low heat, continue mixing rice and curd mixture.
- Add in ghee. Mix well.
- Turn off heat. Serve while it is warm.
