Ghes (Rice Porridge)
Ghes is a popular Gujarati rice porridge that my grandmother passed down to my mom and aunts. It is a comfort dish that is simple and filling.

- 1 cup basmati rice
- 4 cups water for ghes
- 2 cups dahi
- 1 tbsp ghee clarified butter
- salt to taste
Wash rice in water a few times until the water is clear. Soak rice in water for at least 30 minutes.
Use a pressure cooker/ rice cooker/ instant pot/ stove top to cook rice.
On low heat, using a deep, non-stick pan, add cooked rice with water, dahi and salt. Mix well.
Use an immersion blender to help break down the rice.
On low heat, continue mixing rice and curd mixture.
Add in ghee. Mix well.
Turn off heat. Serve while it is warm.
