Ghes (Rice Porridge)

Ghes is a popular Gujarati rice porridge that my grandmother passed down to my mom and aunts. It is a comfort dish that is simple and filling.

Ingredients

  • 1 cup basmati rice
  • 4 cups water for ghes
  • 2 cups dahi
  • 1 tbsp ghee clarified butter
  • salt to taste

Instructions

  • Wash rice in water a few times until the water is clear. Soak rice in water for at least 30 minutes.
  • Use a pressure cooker/ rice cooker/ instant pot/ stove top to cook rice.
  • On low heat, using a deep, non-stick pan, add cooked rice with water, dahi and salt. Mix well.
  • Use an immersion blender to help break down the rice.
  • On low heat, continue mixing rice and curd mixture.
  • Add in ghee. Mix well.
  • Turn off heat. Serve while it is warm.
