Vegan Funfetti Pancakes

These kid and adult friendly pancakes make for a festive treat. It is completely vegan and so yum.

Ingredients

  • 1 cup all purpose flour
  • 1 tbsp baking powder
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 cup oat milk or non-dairy milk
  • 1 tbsp lemon juice
  • 1 tsp pure vanilla extract
  • 3 tbsp sprinkles
  • 2 tbsp maple syrup to serve

Instructions

  • In a bowl, whisk together flour, baking powder, sugar and salt. Set aside.
  • In a different bowl, mix together oat milk, vanilla extract and lemon juice.
  • Pour wet ingredients to dry ingredients. Stir well.
  • Fold in sprinkles to the batter.
  • Let batter sit for 5- 7 minutes.
  • Heat a non-stick pan or griddle.
  • Scoop batter on to the pan until you see bubbles form. Flip pancake and cook until golden brown.
  • Serve warm with maple syrup.
