Vegan Funfetti Pancakes
These kid and adult friendly pancakes make for a festive treat. It is completely vegan and so yum.

- 1 cup all purpose flour
- 1 tbsp baking powder
- 2 tbsp sugar
- 1 tsp salt
- 1 cup oat milk or non-dairy milk
- 1 tbsp lemon juice
- 1 tsp pure vanilla extract
- 3 tbsp sprinkles
- 2 tbsp maple syrup to serve
In a bowl, whisk together flour, baking powder, sugar and salt. Set aside.
In a different bowl, mix together oat milk, vanilla extract and lemon juice.
Pour wet ingredients to dry ingredients. Stir well.
Fold in sprinkles to the batter.
Let batter sit for 5- 7 minutes.
Heat a non-stick pan or griddle.
Scoop batter on to the pan until you see bubbles form. Flip pancake and cook until golden brown.
Serve warm with maple syrup.
