Street Style Maggi

This recipe brings back memories from my trip to India. It is a spicy and flavorful version of one of my favorite comfort foods - maggi masala noodles.

Ingredients

  • 4 packets maggi masala noodles small size
  • 4 sachets maggi tastemaker masala
  • 2 tbsp Amul butter salted
  • 1 medium red onion chopped
  • 1 clove garlic minced
  • 1 cup mixed vegetables (carrots, corn, peas, green beans) frozen and thawed
  • 1 bunch scallions chopped
  • 2 tbsp thecha chutney (red chili garlic)
  • 1 tbsp Maggi Masala* or combination of (1 tsp each of red chili powder, turmeric powder, coriander powder, salt, chaat and garam masala)
  • 2 cups water
  • 1 tbsp cilantro garnish

Instructions

  • Melt 1 tablespoon of butter in a pan or wok on medium heat.
  • Add in minced garlic and sauté until golden brown.
  • Add in red onions and scallions. Sauté until onions are translucent.
  • Add in mixed veggies. Stir well.
  • Add in the spices (tastemaker masala and masala blend). Mix well.
  • Add in thecha chutney. Mix well.
  • Add in 2 cups of water. Bring to boil.
  • Add in maggi noodles. (Break into half or leave whole).
  • Lower heat and cover pan. Let the noodles cook for 2 minutes.
  • Once the noodles are cooked, add in 1 tablespoon of butter.
  • Garnish with cilantro.
  • Serve immediately.

Notes

*Maggi masala is something I got from my trip to India. It is a special blend of spices for added flavor. However, if you do not have that you can use a combination of spices as mentioned in the recipe. This recipe serves 4 but you can adjust to your family size. Maggi masala noodles and thecha chutney are available at any Indian grocery store.
