Strawberry Salad with Poppyseed Dressing

Ingredients

  • 1 cups strawberries sliced
  • 2 cups mixed greens (lettuce, spinach, arugula)
  • 1/4 cup aged cheddar cheese crumbled
  • 1/4 cup glazed pecans

Poppy Seed Dressing

  • 1 tbsp poppy seeds
  • 1/4 cup balsamic vinegar
  • 3 tbsp olive oil extra virgin
  • 1 tsp dijon mustard
  • 1 tsp honey
  • 1 tsp sea salt
  • 1 tsp black pepper

Instructions

  • First make the poppy seed dressing by whisking all the ingredients listed under Poppy Seed Dressing. Set aside.
  • Next, in a large mixing bowl, add in mixed greens, aged cheddar and glazed pecans.
  • Then slowly add in your dressing. Mix well and serve in salad bowls.
