Strawberry Chia Pudding

This recipe is dairy-free and so easy to make. Great to have for breakfast.

Ingredients

  • 2 cups almond milk, unsweetened vanilla flavor or any non-dairy milk (coconut, oat, soy)
  • 1/2 cup chia seeds
  • 2-4 fresh strawberries washed and sliced; for garnish
  • 2 tbsp maple syrup
  • 3-4 dried strawberries for pink color
  • 1 tsp vanilla extract
  • 1/2 tsp ground cardamom

Instructions

  • In a mixing bowl, take your non-dairy milk, vanilla extract, ground cardamom, maple syrup and mix well.
  • Crush dried strawberries in a mortar & pestle until it is a fine powder.
  • Add the strawberry powder to mixing bowl and mix well until milk is a light pink color.
  • Add in your chia seeds to the mixing bowl and stir well.
  • Pour chia seed pudding mixture into your mason jar. Cover lid and store in refrigerator overnight.
  • When ready to serve, garnish with fresh cut strawberries.
  • Enjoy this creamy and filling breakfast.

I get my dried strawberries from Trader Joes.
