Spinach & Feta Bites

These make for a great holiday appetizer. They are easy to make and are a perfect bite size appetizer.

Ingredients

  • 1 box phyllo shells
  • 1/2 cup crumbled feta mediterranean
  • 1 cup baby spinach triple washed, fresh
  • 2-3 garlic cloves
  • 1 tsp oregano
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tbsp olive oil extra virgin

Instructions

  • Take a pan and sauté garlic in olive oil on medium heat.
  • Add in baby spinach and continue to sauté.
  • Add in all the seasonings. Mix well.
  • Turn off stove and set aside sautéd spinach.
  • On a baking tray, line up phyllo shells.
  • Add in sautéd spinach and top off with crumbled feta.
  • Bake in toaster over for 3-4 minutes.
  • Serve immediately.

Notes

I used Athens Phyllo shells and Trader Joe's mediterranean style crumbled feta. Omit garlic to make it Jain friendly.
