Savory Whipped Cottage Cheese Toast

This savory version has layers of whipped cottage cheese, basil pesto sauce, cherry tomatoes, sea salt and red crushed pepper on a toasted sourdough bread. It is also Jain friendly.

Ingredients

  • sourdough bread slice
  • cottage cheese whipped
  • cherry tomatoes sliced
  • basil pesto sauce
  • sea salt
  • red crushed pepper

Jain Basil Pesto Sauce

  • 2 cups basil
  • 1/2 cup olive oil
  • 1/2 cup walnuts
  • 1 tsp black pepper
  • 1 tsp salt

Instructions

  • Take cottage cheese and whip in a food processor until it is creamy.
  • Toast a slice of sourdough bread.
  • Spread whipped cottage cheese on the sliced sourdough bread.
  • Spread basil pesto sauce on top of the whipped cottage cheese.
  • Layer on sliced cherry tomatoes
  • Sprinkle sea salt and red crushed pepper.

Jain Basil Pesto Sauce

  • Blend fresh basil, olive oil, walnuts, sea salt and black pepper in a food processor or blender.

Notes

You can also use store bought basil pesto sauce from Seggiano's found at Whole Foods which is vegan.
