Raw Banana Parathas with Cucumber Mint Raita

This is a Jain recipe that makes for a great meal. Enjoy with mango pickle too.

Ingredients

Cucumber Mint Raita

  • 2 cups dahi whole milk
  • 10 mint leaves finely chopped
  • 1 cucumber peeled and shredded
  • 1 tsp salt

Dough for Paratha

  • 2 cups whole wheat flour
  • 1 tbsp oil
  • 1 cup water as needed

Filling for Paratha

  • 4 raw bananas (plantains) steamed and peeled
  • 1 tsp salt to taste
  • 1 tsp garam masala
  • 1 tsp amchur (dry mango) powder
  • 1 tsp chaat masala
  • 1 tsp cumin powder
  • 1 tsp red chili powder

Instructions

Cucumber Mint Raita

  • Whisk yogurt and mix in mint, salt and cucumber.
  • Garnish with crushed mint leaves.

Raw Banana Paratha

  • Make sure to steam raw bananas in the IP or pressure cooker. Once cooled, peel and grate. Set aside.
  • Add all the spices and seasoning as mentioned to the grated raw banana.
  • Mix well and form them in rounds. Set aside.
  • Knead dough, cut into pieces and use your palms to shape them.
  • Roll out the paratha dough into 3 inch circle and add the filling in the middle.
  • Carefully close the paratha without the filling oozing out.
  • Gently roll out the paratha.
  • Using oil, pan fry the parathas on both sides until golden brown.
  • Enjoy with raita.
