Pumpernickel Cucumber Dill Sandwiches

These are one of my favorite sandwiches for tea parties. It is so yum and Jain friendly.

Ingredients

  • 1 loaf pumpernickel bread
  • 1/2 cup vegan mayo
  • 1 medium English cucumber thinly sliced
  • 1 tbsp black pepper or lemon pepper
  • 1 tsp lemon zest
  • 1/4 cup dill fresh

Instructions

  • Spread vegan mayo on pumpernickel bread.
  • Layer with cucumber slices and sprinkle lemon pepper seasoning. Alternatively, you can zest lemon and sprinkle black pepper.
  • Garnish with fresh dill leaves.

Notes

Check out my vegan mayo recipe or you can buy store bought. You can buy lemon pepper seasoning or use salt/pepper and grate lemon peel as an alternative. Use English cucumbers and slice them thinly.
