These are one of my favorite sandwiches for tea parties. It is so yum and Jain friendly.

Ingredients
1loafpumpernickel bread
1/2cupvegan mayo
1mediumEnglish cucumberthinly sliced
1tbspblack pepperor lemon pepper
1tsplemon zest
1/4cupdill fresh
Instructions
Spread vegan mayo on pumpernickel bread.
Layer with cucumber slices and sprinkle lemon pepper seasoning. Alternatively, you can zest lemon and sprinkle black pepper.
Garnish with fresh dill leaves.
Notes
Check out my vegan mayo recipe or you can buy store bought. You can buy lemon pepper seasoning or use salt/pepper and grate lemon peel as an alternative. Use English cucumbers and slice them thinly.
