Pumpernickel Cucumber Dill Sandwiches

These are one of my favorite sandwiches for tea parties. It is so yum and Jain friendly.

Ingredients

  • 2 slices Pumpernickel bread
  • 2 tbsp vegan mayo
  • 1 cucumber thinly sliced
  • 1 tsp lemon pepper
  • 1 tsp dill fresh

Instructions

  • Spread vegan mayo on pumpernickel bread.
  • Layer with cucumbers and sprinkle lemon pepper seasoning.
  • Garnish with fresh dill leaves.

Notes

Check out my Vegan Mayo recipe. You can buy lemon pepper seasoning or use salt/pepper and grate lemon peel as an alternative. I used Persian cucumbers and sliced them thinly.
