Mint Paneer Tikka

This recipe is Jain friendly. Paneer is a cottage cheese that is used in many Indian dishes. This paneer in marinated with mint and other spices. It is full of flavor and great for a summer bbq.

Ingredients

  • 1 block paneer
  • 1 cup mint
  • 1/2 cup coriander
  • 1/2 cup greek yogurt or curd
  • 1 green chili
  • 1 tbsp ginger paste
  • 1 tsp black salt
  • 1/2 tsp kasoori methi (dried fenugreek leaves)
  • 1 green bell pepper sliced in chunks
  • 1 tomato sliced in chunks
  • 1 tsp lemon/lime juice garnish
  • 1 tsp chaat masala garnish

Instructions

  • Cut paneer into cubes and set aside.
  • Create a paste by blending mint, coriander, yogurt, green chili, ginger paste and spices as mentioned.
  • Marinate the paneer, green bell pepper and tomato in the paste and refrigerate for at least 2 hours or overnight.
  • When ready to grill, place paneer, green bell peppers and tomato chunks on a skewer.
  • Grill on all sides until cooked properly.
  • Garnish with lemon juice and chaat masala.

Notes

If you do not have black salt, you can use kosher salt. Curd is made from hung yogurt/dahi. Wooden skewers should be soaked in water for at least 2 hours before using. This will help prevent them from getting burnt on the grill. You can also use 2 tablespoons of mint powder vs. fresh mint.
