Loaded Sheet Pan Nachos

This makes for a quick meal idea and can be easily prepared when having the right ingredients on hand. You can add whatever toppings you like. This is how I make mine.

Ingredients

  • 10 oz tortilla chips
  • 1 can beans red kidney
  • 1/2 cup water for beans
  • 1 tsbp oil
  • 2 tbsp taco sauce
  • 1 tomato diced
  • 1 cup Mexican cheese shredded
  • 1 avocado ripe
  • 1 -2 jalapenos diced
  • 3 tbsp cilantro
  • 2 sprigs green onion chopped
  • 1 red onion chopped
  • 1/2 cup lettuce shredded
  • 1 lemon/lime juiced
  • 2 tbsp taco seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp cumin powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder

Instructions

Seasoned Beans

  • Drain beans from can and rinse.
  • To a pan, heat oil. Once oil is ready, sauté green onions and jalapeños. Then, add in beans and water. Then add in salt, cumin, turmeric, red chili powder and taco seasoning. Use a masher to mash beans and mix well. Turn off heat.

Guacamole

  • Slice ripe avocados in half, remove the pit and scoop into mixing bowl.
  • Use a fork to mash them to desired level of consistency. Add in lime juice, salt, cilantro and jalapeños.
  • Mix well.

Pico De Gallo

  • In a bowl, add diced tomatoes, onions, jalapeños and chopped cilantro.
  • Stir in lime juice and season with salt and pepper.

Loaded Nachos

  • In a sheet pan lined with parchment paper or foil, spread out tortilla chips.
  • Drizzle taco sauce over the chips, followed by seasoned beans, and lots of shredded Mexican cheese.
  • Bake in oven at 400℉ for 5-7 minutes until cheese is melted.
  • Remove from oven. Add your desired toppings - guacamole, pico de gallo, and shredded lettuce.
  • Serve immediately!

Notes

Make sure to use thick tortilla chips so it holds everything together. Avoid thin or restaurant style chips. I love using Mexican cheese or shredded pepper jack cheese. I used Taco Bell's Fire sauce. For Jain version, skip onions and use Taco Bell's mild sauce. I also have a Jain taco seasoning recipe on my blog.
