Jain Tacos

These vegetarian tacos are made with no onion no garlic taco seasoning and filled with beans, avocado, corn and peppers. I also used GF taco shells.

Ingredients

  • 1 box taco shells
  • 1 can black beans
  • 1/4 cup water
  • 1/2 cup sweet corn kernels
  • 1 jalapeno or serrano pepper diced
  • 1 avocado diced
  • 1/2 cup sour cream
  • 2 tbsp taco seasoning
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 lime juice
  • 1 cup cheddar cheese blend

Instructions

  • Heat a pan with oil. Add in peppers, black beans, and corn.
  • Add salt and 1 tablespoon of taco seasoning.
  • Add water and cook for a few minutes.
  • Turn off heat.
  • Add avocado and squeeze lime juice on seasoned bean mixture. Mix well.
  • In a separate bowl, mix together sour cream and 1 tablespoon of taco seasoning. Set aside.
  • Heat taco shells according to package.
  • Take a few spoons of seasoned bean mixture to fill taco shells.
  • Sprinkle cheese on top.
  • Take a dollop of seasoned sour cream to garnish.
  • Enjoy!
