Jain Sub Sandwich

This is perfect for Game Day, parties or picnics. Easy to make, vegetarian and so tasty. This recipe is Jain.

Ingredients

  • 1 Italian or French baguette
  • 1 tbsp olive oil
  • 2 - 4 american cheese slices
  • 2 - 4 pepper jack cheese slices
  • 1 cup lettuce shredded
  • 1-2 tomatoes thinly sliced
  • 1/2 cup pickles chips
  • 1/2 cup pickled jalapenos slices
  • 1 tbsp spicy brown mustard
  • 1 tbsp vegan mayo
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp oregano
  • parchment paper to wrap the sandwiches

Instructions

  • Make sure to shred lettuce and thinly slice tomatoes. Set aside.
  • Whisk together olive oil with oregano. Set aside.
  • Slice baguette lengthwise and spread butter evenly on the inside.
  • On the bottom portion of the baguette, layer on cheese, lettuce, tomatoes, pickles and jalapenos.
  • Spread oregano olive oil mixture. Then, sprinkle salt and pepper.
  • For the top portion of the baguette, spread vegan mayo and spicy brown mustard.
  • Then take top layer and cover the bottom layer of sandwich.
  • Using parchment paper, place sandwich carefully and roll it and using a sharp knife, cut into halves. You will now have individualized portions.

Notes

I got most of the ingredients from Trader Joes including the submarine bread which comes in a pack of 4.  My vegan mayo recipe is on my website. Trader Joes carries vegetarian American and pepper jack cheeses.
