Jain Spicy Thai Basil Noodles

This is a delicious recipe that has no onion no garlic but has lots of flavor. It super easy to make with the right ingredients on hand.

Ingredients

  • 1 packet rice noodles
  • 1/2 cup corn
  • 1 cup thai basil
  • 1 tbsp toasted sesame seeds for garnish

Sauce

  • 1/4 cup coconut aminos or dark soy sauce
  • 1 tbsp sambal oelek (chili paste)
  • 1 tbsp rice wine vinegar
  • 1/3 cup brown sugar
  • 1 tsp lemon juice

Instructions

  • Cook noodles according to package. Set aside.
  • In a sauce pan on medium heat, whisk together all the ingredients listed under sauce.
  • Add in the cooked rice noodles and corn. Cook for 2-5 minutes until it is all well coated in sauce.
  • Turn off heat and stir in Thai basil.
  • Serve immediately and garnish with toasted sesame seeds.

Notes

I used organic Thai brown rice noodles from the brand Explore Cuisine found at Costco. If you cannot find Thai basil, you can use regular basil.
