Rinse rice in water at least 3 times. Then let it soak in water for at least 30 minutes. Set aside.
If using fresh paneer, cut into cubes and pan fry them until golden brown on all sides. Set aside.
Turn on IP on sauté mode.
Add in ghee, cinnamon stick, black peppercorns, dried red chili pepper, cloves, cardamom pods, bay leaves, curry leaves, ginger, saffron and stir for a minute.
Add in mixed veggies, ground turmeric, red chili powder and salt. Stir well.
Add in rice and water. Mix well.
Add in the pan fried paneer. Do not stir.
Cover IP with lid and to seal position. Turn on HIGH pressure cook mode to 6 minutes.
After 6 minutes, let it release naturally for 10 minutes.
Open the lid and add in cilantro for garnish.
Serve warm.
