Instant Pot Paneer Pulao

This is a great Instant Pot recipe for making paneer pulao. It is also a Jain friendly recipe with no onion or no garlic. This can be made kid friendly by avoiding dried red chilies.

Ingredients

  • 1 cup rice basmati
  • 1 1/2 cups water
  • 1 block paneer cubes
  • 2 cups mixed veggies (peas, carrots, corn, green beans) frozen
  • 1 tsp ginger
  • 1 tbsp ghee
  • 1 tsp turmeric ground
  • 1 tsp red chili powder
  • 1 dried red chili optional
  • 2 -3 cloves
  • 1 cinnamon stick
  • 2-3 cardamom pods
  • 2 - 3 bay leaves
  • 2 - 3 curry leaves
  • 1 tsp black peppercorn whole
  • salt to taste
  • 2 -3 saffron strands
  • 1 tbsp oil for frying paneer
  • water soak rice
  • 1/4 cup cilantro garnish

Instructions

  • Rinse rice in water at least 3 times. Then let it soak in water for at least 30 minutes. Set aside.
  • If using fresh paneer, cut into cubes and pan fry them until golden brown on all sides. Set aside.
  • Turn on IP on sauté mode.
  • Add in ghee, cinnamon stick, black peppercorns, dried red chili pepper, cloves, cardamom pods, bay leaves, curry leaves, ginger, saffron and stir for a minute.
  • Add in mixed veggies, ground turmeric, red chili powder and salt. Stir well.
  • Add in rice and water. Mix well.
  • Add in the pan fried paneer. Do not stir.
  • Cover IP with lid and to seal position. Turn on HIGH pressure cook mode to 6 minutes.
  • After 6 minutes, let it release naturally for 10 minutes.
  • Open the lid and add in cilantro for garnish.
  • Serve warm.
