Ebelskiver (Danish Pancakes) with Pineapple Orange Jam

Ebelskiver is a Danish pancake. I filled these yummy bites with pineapple orange jam and sprinkled powder sugar. These are easy to make and great for breakfast/brunch.

Ingredients

  • 1 pancake mix
  • 1 tsp butter
  • 2 tbsp pineapple jam
  • 1 tsp orange zest
  • 1 tsp powdered sugar

Instructions

  • Make pancake batter according to package. Set aside.
  • Zest an orange (the outside peel only) and set aside.
  • Take pineapple jam and mix in the orange zest. Stir well and set aside.
  • Heat ebelskiver pan over medium heat.
  • Brush pan with butter until it bubbles.
  • Add 1 tablespoon of the pancake batter in each mould.
  • Place 1 teaspoon of pineapple orange jam filling in the center and seal with 1 teaspoon of the pancake batter.
  • After 3 minutes, turn ebelskiver using a wooden chopstick.
  • Let is cook for another 3 minutes until golden brown.
  • Turn off stove and carefully remove each ebelskiver with a wooden chopstick.
  • Sprinkle powdered sugar and enjoy.

Notes

I used my Nordic Ware Ebelskiver pan. You can also use an appam pan. You can use any fruit jam you have on hand for the filling. I used Birch Benders original pancake mix and added water to make batter. I used Kissan brand pineapple jam found at the Indian grocery stores. Do not use a metal spoon to flip or remove ebelskiver. You must use a wooden stick or wooden chopsticks.
