Crispy Baked Avocado Fries with Vegan Spicy Mayo

This recipe makes for a healthy appetizer or side dish for your next gathering. It is completely vegan and jain friendly.

Ingredients

  • 1 avocado
  • 1 tbsp Trader Joe's Bomba sauce
  • 2 tbsp Sir Kensington's Fabanaise
  • 2 tbsp chickpea flour
  • 1 tbsp water
  • 1 tsp olive oil
  • 3 tbsp panko bread crumbs
  • 1 tsp oregano
  • 1 tsp red crushed pepper
  • 1 tsp salt

Instructions

For the Vegan Spicy Mayo

  • Mix both the Bomba sauce and Fabanaise together

For the Avocado Fries

  • Preheat the oven at 350° F.
  • Peel and slice the avocado.
  • Take the chickpea flour and water. Mix well to form batter. Set aside.
  • Add all the seasoning to the panko. Set aside.
  • Take the sliced avocado and mix in chickpea batter and then coat with the seasoned panko.
  • Grease baking sheet with oil. Bake the avocado for 15 minutes and then broil 2 minutes until brown.
  • Enjoy the crispy, baked avocado fries with the spicy vegan mayo dipping sauce.

Notes

This recipe is vegan.  However, it can be made gluten free by using gluten free breadcrumbs.
