Coconut Sticky Rice with Mango

I used ready made cooked sticky rice to make this. It is a delicious, sweet rice recipe.

Ingredients

  • 1 container Bibigo sticky rice cooked and ready to eat
  • 2 -3 tbsp coconut milk
  • 1 tsp coconut or brown sugar
  • 1 tbsp blue pea flower optional
  • 1 cup boiled water optional
  • 2 tbsp ripe mango puree
  • heart shaped cookie cutter optional

Instructions

  • Make blue pea tea by soaking blue pea flowers in boiled water for 10 minutes.
  • Open Bibigo sticky rice container half way and pour in a few spoonfuls of coconut milk, blue pea tea and 1 tsp of brown or coconut sugar.
  • Heat in microwave according to package instructions (Approximately 90 seconds).
  • On a plate, pour sticky rice upside down.
  • Place heart shaped cookie cutter on top of rice. Pour in mango purée.
  • Serve immediately.

Notes

I used Bibigo Ready to Eat Sticky Rice from Costco. They come in an 8-pack. I got the blue pea flowers from Suncore Foods. You can adjust sugar as per your taste as mango purée is naturally sweet.
