Cheesy Fiesta Tots
This is a delicious comfort dish made with tater tots using Mexican flavors. It makes for a great appetizer.

Instructions
Preheat oven to 400°F.
Line a baking sheet with aluminum foil. Bake tater tots according to package.
Heat oil on a pan to sauté onion and garlic.
Add in taco seasoning, spices and serrano peppers. Mix well.
Add in enchilada sauce and cook for a few minutes.
In a separate baking pan, layer cooked tater tots, seasoned sauce and mexican cheese.
Broil in oven for 2 minutes until cheese has melted.
Garnish with cilantro.
Serve immediately.
Notes
I used Trader Joe's Frozen Tater Tots. I used Old El Paso red enchilada sauce and taco seasoning (Hot & Spicy).
