Broccoli Cavatappi in Béchamel Sauce

Béchamel sauce is another name for white sauce. I love making this sauce when I want something different. This recipe is vegetarian and Jain friendly. It is a great way to include broccoli in your meals. It is both adult and kid friendly.

Ingredients

  • 2 cups Cavatappi or pasta of your choice cooked
  • 1 cup broccoli washed and chopped
  • 1 cup milk heated
  • 2 tbsp butter
  • 2 tbsp mozzarella cheese
  • 2 tbsp all purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp red crushed pepper
  • 1 tsp oregano

Instructions

  • Warm milk in microwave or stovetop. Set heated milk aside.
  • Using a heavy bottom sauce pan, melt butter.
  • Add in flour and keep stirring. Do not let it brown.
  • Slowly add in the warm milk and continue to stir until there are no lumps. Sauce will thicken.
  • Add in mozzarella cheese and continue to stir until it melts.
  • Add in broccoli and keep stirring.
  • Add in cooked pasta and mix well.
  • Add in salt, pepper, red crushed pepper and oregano. Stir well and enjoy.

Notes

It is important to use warm milk and whisk consistently. You can use any veggies, pasta or cheese you have on hand.
