Bitchin' Panini

This recipe is inspired from Bitchin' Cilantro Chili Sauce. It is a delicious almond base spread founded by a female entrepreneur, Starr Edwards. You can use my cilantro chutney as an alternative if you want a Jain friendly version.

Ingredients

  • 8 oz Bitchin' Cilantro Chili Sauce
  • 2 tbsp olive oil extra virgin
  • 1 tbsp Italian seasoning
  • 8 oz fresh mozzarella cheese sliced
  • 2 tomatoes sliced
  • 1 cup fresh basil
  • 1 tsp black pepper
  • 1 tsp salt
  • 4 artisan rolls

Instructions

  • Take olive oil, Italian seasoning and spread on fresh mozzarella slices. Set aside.
  • Spread Cilantro Chili Bitchin' Sauce on the insides of each roll.
  • Layer seasoned fresh mozzarella slices, tomato slices and basil on the roll.
  • Sprinkle salt and pepper.
  • Grill the panini on a grill pan or panini press until fully cooked and cheese has melted.
  • Enjoy warm.

Notes

I used Bitchin' Sauce in cilantro chili flavor. If you want to make this recipe Jain friendly, you can use my cilantro chutney recipe. I got artisan rolls from Costco but you can use any Italian type of bread such as ciabatta, focaccia or baguettes. I used Belgioioso fresh mozzarella sliced cheese from Costco.
