Apple & Pear Arugula Salad
This salad is great for the fall season using apples, pears, walnuts and pecans. I also like to add pomegranates for a festive touch. Top it off with balsamic glaze. Great side salad for Thanksgiving. The dressing is simple to make. This serves a family of 4.

- 2 apples cored, peeled, thinly sliced
- 2 pears peeled, thinly, sliced
- 4 cups arugula
- 1/3 cup olive oil extra virgin
- 1/3 cup orange juice
- 1 tbsp maple syrup
- 1 tbsp balsamic glaze
- 1/2 cup walnuts chopped
- 1/2 cup pecans chopped
- 1/4 cup pomegranate arils
- pinch sea salt
- pinch black pepper
- 1 tbsp lemon juice
- 1 tsp lemon zest
To make the dressing, whisk together olive oil, orange juice, maple syrup, lemon juice, lemon zest, sea salt and pepper.
Make sure to wash, peel, core, and slice your apples and pears.
Chop walnuts and pecans.
In a salad bowl toss together arugula, apples, pears, pomegranate arils, walnuts, pecans and two tablespoons of dressing; Give it a mix. Drizzle balsamic glaze; Serve immediately.
Store remaining dressing in an airtight mason jar in refrigerator and use within 3 days.
