Street Style Maggi
This recipe brings back memories from my trip to India. It is a spicy and flavorful version of one of my favorite comfort foods – maggi masala noodles.
Servings: 4 people
Ingredients
- 4 packets maggi masala noodles small size
- 4 sachets maggi tastemaker masala
- 2 tbsp Amul butter salted
- 1 medium red onion chopped
- 1 clove garlic minced
- 1 cup mixed vegetables (carrots, corn, peas, green beans) frozen and thawed
- 1 bunch scallions chopped
- 2 tbsp thecha chutney (red chili garlic)
- 1 tbsp Maggi Masala* or combination of (1 tsp each of red chili powder, turmeric powder, coriander powder, salt, chaat and garam masala)
- 2 cups water
- 1 tbsp cilantro garnish
Instructions
- Melt 1 tablespoon of butter in a pan or wok on medium heat.
- Add in minced garlic and sauté until golden brown.
- Add in red onions and scallions. Sauté until onions are translucent.
- Add in mixed veggies. Stir well.
- Add in the spices (tastemaker masala and masala blend). Mix well.
- Add in thecha chutney. Mix well.
- Add in 2 cups of water. Bring to boil.
- Add in maggi noodles. (Break into half or leave whole).
- Lower heat and cover pan. Let the noodles cook for 2 minutes.
- Once the noodles are cooked, add in 1 tablespoon of butter.
- Garnish with cilantro.
- Serve immediately.
Notes
*Maggi masala is something I got from my trip to India. It is a special blend of spices for added flavor. However, if you do not have that you can use a combination of spices as mentioned in the recipe. This recipe serves 4 but you can adjust to your family size. Maggi masala noodles and thecha chutney are available at any Indian grocery store.
