
Pumpernickel Cucumber Dill Sandwiches
These are one of my favorite sandwiches for tea parties. It is so yum and Jain friendly.
Ingredients
- 1 loaf pumpernickel bread
- 1/2 cup vegan mayo
- 1 medium English cucumber thinly sliced
- 1 tbsp black pepper or lemon pepper
- 1 tsp lemon zest
- 1/4 cup dill fresh
Instructions
- Spread vegan mayo on pumpernickel bread.
- Layer with cucumber slices and sprinkle lemon pepper seasoning. Alternatively, you can zest lemon and sprinkle black pepper.
- Garnish with fresh dill leaves.
Notes
Check out my vegan mayo recipe or you can buy store bought. You can buy lemon pepper seasoning or use salt/pepper and grate lemon peel as an alternative. Use English cucumbers and slice them thinly.
