Jain Tacos
These vegetarian tacos are made with no onion no garlic taco seasoning and filled with beans, avocado, corn and peppers. I also used GF taco shells.
Ingredients
- 1 box taco shells
- 1 can black beans
- 1/4 cup water
- 1/2 cup sweet corn kernels
- 1 jalapeno or serrano pepper diced
- 1 avocado diced
- 1/2 cup sour cream
- 2 tbsp taco seasoning
- 1 tsp salt
- 1 tbsp olive oil
- 1 lime juice
- 1 cup cheddar cheese blend
Instructions
- Heat a pan with oil. Add in peppers, black beans, and corn.
- Add salt and 1 tablespoon of taco seasoning.
- Add water and cook for a few minutes.
- Turn off heat.
- Add avocado and squeeze lime juice on seasoned bean mixture. Mix well.
- In a separate bowl, mix together sour cream and 1 tablespoon of taco seasoning. Set aside.
- Heat taco shells according to package.
- Take a few spoons of seasoned bean mixture to fill taco shells.
- Sprinkle cheese on top.
- Take a dollop of seasoned sour cream to garnish.
- Enjoy!
