Cheesy Fiesta Tots
This is a delicious comfort dish made with tater tots using Mexican flavors. It makes for a great appetizer.
Ingredients
- 1 bag tater tots frozen
- 1 can enchilada sauce
- 1 tbsp olive oil extra virgin
- 1 small onion diced
- 1-2 cloves garlic minced
- 2 serrano peppers diced
- 1 cup mexican cheese blend shredded
- 1 tbsp taco seasoning
- 1 tsp salt
- 1 tsp black pepper
- 1/2 cup cilantro garnish
Instructions
- Preheat oven to 400°F.
- Line a baking sheet with aluminum foil. Bake tater tots according to package.
- Heat oil on a pan to sauté onion and garlic.
- Add in taco seasoning, spices and serrano peppers. Mix well.
- Add in enchilada sauce and cook for a few minutes.
- In a separate baking pan, layer cooked tater tots, seasoned sauce and mexican cheese.
- Broil in oven for 2 minutes until cheese has melted.
- Garnish with cilantro.
- Serve immediately.
Notes
I used Trader Joe’s Frozen Tater Tots. I used Old El Paso red enchilada sauce and taco seasoning (Hot & Spicy).
