Strawberry Chia Pudding
This recipe is dairy-free and so easy to make. Great to have for breakfast.
Ingredients
- 2 cups almond milk, unsweetened vanilla flavor or any non-dairy milk (coconut, oat, soy)
- 1/2 cup chia seeds
- 2-4 fresh strawberries washed and sliced; for garnish
- 2 tbsp maple syrup
- 3-4 dried strawberries for pink color
- 1 tsp vanilla extract
- 1/2 tsp ground cardamom
Instructions
- In a mixing bowl, take your non-dairy milk, vanilla extract, ground cardamom, maple syrup and mix well.
- Crush dried strawberries in a mortar & pestle until it is a fine powder.
- Add the strawberry powder to mixing bowl and mix well until milk is a light pink color.
- Add in your chia seeds to the mixing bowl and stir well.
- Pour chia seed pudding mixture into your mason jar. Cover lid and store in refrigerator overnight.
- When ready to serve, garnish with fresh cut strawberries.
- Enjoy this creamy and filling breakfast.
Notes
I get my dried strawberries from Trader Joes.
