Raw Banana Parathas with Cucumber Mint Raita
This is a Jain recipe that makes for a great meal. Enjoy with mango pickle too.
Ingredients
Cucumber Mint Raita
- 2 cups dahi whole milk
- 10 mint leaves finely chopped
- 1 cucumber peeled and shredded
- 1 tsp salt
Dough for Paratha
- 2 cups whole wheat flour
- 1 tbsp oil
- 1 cup water as needed
Filling for Paratha
- 4 raw bananas (plantains) steamed and peeled
- 1 tsp salt to taste
- 1 tsp garam masala
- 1 tsp amchur (dry mango) powder
- 1 tsp chaat masala
- 1 tsp cumin powder
- 1 tsp red chili powder
Instructions
Cucumber Mint Raita
- Whisk yogurt and mix in mint, salt and cucumber.
- Garnish with crushed mint leaves.
Raw Banana Paratha
- Make sure to steam raw bananas in the IP or pressure cooker. Once cooled, peel and grate. Set aside.
- Add all the spices and seasoning as mentioned to the grated raw banana.
- Mix well and form them in rounds. Set aside.
- Knead dough, cut into pieces and use your palms to shape them.
- Roll out the paratha dough into 3 inch circle and add the filling in the middle.
- Carefully close the paratha without the filling oozing out.
- Gently roll out the paratha.
- Using oil, pan fry the parathas on both sides until golden brown.
- Enjoy with raita.
