Ped

This is a winter staple made in many Gujarati Jain homes. This is my mom's recipe that she makes in the winter season. We eat a spoonful of warm ped in the mornings. The warming spices in the ped can help with winter colds and join relief. This item must be kept refrigerated and stored in airtight container.

Ingredients

  • 8 cups whole milk boiled
  • 1 cup edible gum gundar
  • 1 cup ghee
  • 2 tbsp ginger powder soonth
  • 2 tbsp peepramul powder ganthoda
  • 1/2 cup batrisu powder katlu
  • 1 cup sakar sugar candy, mishri
  • 1 cup dry dates kharek, chopped
  • 1 cup almonds chopped
  • 1 cup desiccated coconut chopped

Instructions

  • In a heavy bottom deep pan, on medium heat, melt ghee.
  • Once ghee is melted, add in gundar (edible gum) and continue to let it roast. The edible gum will bloom.
  • Add in boiled milk to the pan and it will curdle.
  • Then add in sakar, soonth (ginger powder), ganthoda (peepramul powder), katlu (batrisu powder) and mix well. Continue to let it simmer.
  • Add in chopped dried fruits (almonds, kharek, coconut). Mix well.
  • Continue to let it simmer until it thickens.
  • Turn off flame. Garnish with chopped almonds.
  • Once it is at room temperature, store in airtight container and keep refrigerated.
  • Recommended to serve warm. Enjoy a spoonful of ped in the mornings.

Notes

You can find all these ingredients at local Asian Indian supermarket. The ped must be stored in an airtight container in the refrigerator. It is good for up to 4 weeks in the refrigerator. It is best served warm.
