Vegan Tom Yum Soup
This soup comes together in minutes thanks to store bought vegan Tom Yum paste.

- 3 tbsp vegan tom yum paste
- 2 cups vegetable broth
- 1 cup tofu extra firm
- 1/2 cup baby corn
- 1 tbsp cilantro or mint leaves garnish
In a heavy bottom pan, add in the vegan Tom Yum paste and vegetable broth. Mix well and let it simmer on medium heat for a few minutes.
Add in tofu and baby corn. Continue to let it simmer for 5-7 minutes.
Turn off stove.
Garnish with cilantro or mint leaves.
