Vegan Tom Yum Soup

This soup comes together in minutes thanks to store bought vegan Tom Yum paste.

Ingredients

  • 3 tbsp vegan tom yum paste
  • 2 cups vegetable broth
  • 1 cup tofu extra firm
  • 1/2 cup baby corn
  • 1 tbsp cilantro or mint leaves garnish

Instructions

  • In a heavy bottom pan, add in the vegan Tom Yum paste and vegetable broth. Mix well and let it simmer on medium heat for a few minutes.
  • Add in tofu and baby corn. Continue to let it simmer for 5-7 minutes.
  • Turn off stove.
  • Garnish with cilantro or mint leaves.
