Spinach and Cheese Lasagna Rolls

This is one of my favorite pasta dishes. It is comforting, yum and a great twist to traditional lasagna. This recipe can be made Jain friendly.

Ingredients

  • 1 package lasagna sheets
  • 1 tbsp olive oil extra virgin
  • 16 oz ricotta cheese
  • 1 1/2 cups mozzarella cheese shredded
  • 2 cups baby spinach chopped
  • 1 jar pasta sauce
  • 1 tsp Italian seasoning
  • 1 tsp red crushed pepper
  • 1 tsp salt to taste
  • 1 tsp pepper

Instructions

  • Cook lasagna noodles according to package. Drain and set noodles next to each other on parchment paper to let it dry.
  • Preheat oven to 350°F.
  • To make the filling, combine spinach, olive oil, ricotta cheese, and spices mentioned in a mixing bowl.
  • Spread mixture on each lasagna sheet evenly.
  • Roll up lasagna and place in a greased baking tray.
  • Add pasta sauce and mozzarella cheese on top of each roll up.
  • Garnish with red crushed pepper flakes and italian seasoning.
  • Bake in oven for 25 minutes until cheese has melted.

Notes

This can be made Jain friendly by using no onion no garlic pasta sauce. Check out my pomodoro sauce recipe to use as a substitute under Rigatoni Pomodoro.
