Spicy Green Paneer Frankie
While in India, I discovered so many types of "frankies." I decided to make a Jain friendly version using paneer and my special green sauce. It's so delicious and takes me back to the streets of India.
Ingredients
Spicy Green Sauce
- 1 jar Vegan Mayo
- 1 bunch cilantro washed and cut
- 2-3 serrano peppers
- 1 tsp cumin
- 1 lime juiced
Paneer Frankie
- 1 cup fresh paneer diced
- 1 package flour tortillas
- 1 cup lettuce shredded
- 1 tsp red chili ground
- 1 tsp turmeric ground
- 1 tsp chaat masala
- 1 tsp garam masala
- 1 tsp cumin coriander ground
- 1 tsp oil canola
Instructions
Spicy Green Sauce
- Mix all ingredients in a food processor or Vitamix.
- Store remaining sauce in a glass jar and refrigerate.
Paneer Frankie
- Take the diced paneer and marinate in the spicy green sauce. Store in refrigerator for at least 2 hours.
- Take the shredded lettuce and add all the spices as mentioned above. Mix it all up and store in the refrigerator until ready.
- Heat a flour tortilla with oil on a non-stick pan over medium heat for 15 seconds until it puffs.
- Spread the marinated spicy green paneer on the tortilla.
- Add in the seasoned lettuce.
- Fold the tortilla over and cook on low heat until its golden brown.
- Garnish seasoned lettuce and use remaining extra green sauce as a dip.
Notes
I used Gopi brand of fresh paneer found at Costco. I also used La Tortilla Factory flour tortillas found at Whole Foods. I used Sir Kensington’s Fabanaise Vegan Mayo found at Whole Foods.
