Rose and Coconut Energy Bites
These are delicious energy filled bites made with dried fruit, spices and nuts. Simple and clean ingredients with no additional sugar added. They are vegan, gluten-free and refined sugar-free.
Ingredients
- 8 Mejdool dates pitted
- 1/2 cup pistachios
- 1/2 cup cashews
- 1/2 cup walnuts
- 2-3 dried ginger pieces
- 1 tsp cardamom ground
- 1/8 tsp sea salt
- 1 tbsp rose water
- 1 tsp vanilla extract
- 1/4 cup dried rose petals topping
- 1/4 cup unsweetened shredded coconut topping
Instructions
- Soak pitted dates in warm water for 5-10 minutes until soft. Set aside.
- In a food processor, mix together pistachios, cashews, walnuts, dried ginger, cardamom and sea salt.
- Add in the dates, vanilla extract, rose water and 1/4 cup of reserved water.
- Mix together until a paste forms.
- Pour paste in a mixing bowl. Using clean hands, form a small ball by rolling on your palms.
- Coat bites in either dried coconut or dried rose petals.
- Line them on dish. Refrigerate for at least 1 hour.
- When ready to serve, place them in cupcake wrappers.
