
Mixed Berries Chia Pudding
I love chia pudding. I like to make a batch of my chia pudding base for the week. I like to top it off with different fruits, seeds and nuts. For this one, I did strawberries and wild blueberries along with hemp seeds for the extra protein.
Ingredients
- 1/2 cup chia seeds
- 2 cups almond milk unsweetened
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cardamom ground
- 1/2 cup strawberries sliced
- 1/4 cup wild blueberries frozen
- 2 tsp hemp seeds
Instructions
- In a mixing bowl, take unsweetened almond milk, maple syrup, vanilla extract, ground cardamom and mix well.
- Add in your chia seeds to the mixing bowl and stir well.
- Pour chia seed pudding mixture in a glass storage container with lid.
- Store in refrigerator overnight.
- When ready to serve in individual bowls, garnish with hemp seeds, sliced strawberries and frozen wild blueberries.
Notes
I sourced ingredients from Costco or Whole Foods. It’s all organic and clean ingredients. The chia pudding base is 16g of Protein. Meal prep by making this chia pudding base and use it throughout the week with your favorite toppings. Great as a dessert option too.
