Mexican Pizza
I love Taco Bell's Mexican Pizza and have been making my own version for years. This recipe is easy to make and full of flavor. Please see my notes for Jain version.
Servings: 4 people
Ingredients
- 8 flour tortillas 6 inch
- 4 tbsp oil for frying
- 10 oz red enchilada sauce can
- 1 bottle Taco Bell Mild sauce for Jain sauce
- 15.5 oz red kidney beans can
- 1/2 cup water for beans
- 1 tbsp oil for beans
- 1 tsp asafetida for beans
- 1 tsp red chili powder for regular sauce
- 1 tsp cumin powder for regular sauce
- 1 tsp taco seasoning
- 2 cups Mexican cheese shredded
- 1 tsp red chili powder for Jain beans
- 1 tsp cumin powder for Jain beans
- 1 tsp turmeric powder for Jain beans
- 1 tomato diced
- 1 jalapeno diced
- 2 scallions optional
- 1/4 cup cilantro for garnish
Instructions
Tortillas (Base)
- Heat a pan with oil.
- Poke holes on each tortilla with a fork. This will help prevent the tortillas from puffing.
- Pan fry each tortilla until golden brown. Make sure to flip each side of the tortilla until it is crispy.
- Repeat until all are done. Set aside.
Refried Beans & Enchilada Sauce
- Drain canned red kidney beans.
- Heat oil in a pan on medium heat.
- Add in asafetida.
- Add in cooked red kidney beans.
- Add in taco seasoning. If making Jain, use Jain taco seasoning or just red chili powder, turmeric powder and cumin powder.
- Add 1/2 cup of water and let it simmer.
- Turn off heat. Mash beans and set aside.
- For enchilada sauce, In a saucepan, pour enchilada sauce and add in red chili powder and cumin powder. Heat sauce and stir for a few minutes. Turn off heat and set aside. If making Jain, use Taco Bell Mild sauce.
Mexican Pizza
- Take one pan fried tortilla and layer on refried beans.
- Then place another pan fried tortilla on top.
- Add a spoonful of enchilada sauce on top.
- Then add a layer of cheese.
- Top with diced tomatoes and jalapeños.
- Broil in toaster oven at 450°F for 2 minutes or until cheese has melted.
- Take out of oven and garnish with cilantro and scallions.
- Using a pizza cutter, cut into four pieces.
- Enjoy!
Notes
I used Old El Paso red enchilada sauce, Old El Paso taco seasoning, Cabot Mexican cheese, Ortega flour tortillas and Goya red kidney beans. This recipe can be made Jain friendly using alternatives as mentioned. You can find Taco Bell Mild sauce bottle, which has no onion, no garlic at Walmart.
