Mexican Paneer Kati Rolls
A great combination of flavors and spices to make this delicious fusion recipe.
Ingredients
Spanish Rice
- 1 cup parboiled rice or long grain rice rinsed and washed
- 2 cups water
- 1 tbsp butter salted
- 1 clove garlic minced
- 1 tbsp scallion diced
- 1 tbsp jalapeños fresh and diced
- 1 tbsp red mini bell pepper diced
- 1 tbsp yellow mini bell pepper diced
- 1 tbsp orange mini bell pepper diced
- 1 lime juiced
- 1 tbsp cilantro chopped
- 1 tbsp taco sauce
- 1 tbsp taco seasoning
- 1 tbsp tomato paste
- 1 tsp salt to taste
Seasoned Paneer
- 1 cup fresh paneer sliced into long strips
- 1 tbsp taco seasoning
- 1 tbsp oil
Sauce
- 1 cup vegan mayo
- 2 tbsp taco seasoning
Base
- 1 packet flour tortillas
- 1 tbsp oil
Instructions
Spanish Rice
- Wash and rinse rice thoroughly (at least twice).
- Using Instant Pot, add 2 cups water and 1 cup rice in the inner pot. Close lid, set to "seal" position and press "Rice" mode on.
- While the rice is cooking in the IP, start preparing all the veggies.
- Heat a non-stick pan on medium heat and melt butter.
- Once butter is melted, sauté garlic and scallions.
- Then add in all the peppers and salt. Keep sautéing until tender.
- Add in cooked rice, taco seasoning, taco sauce and tomato paste. Stir well until the rice is well coated and seasoned.
- Squeeze lime juice and stir well.
- Garnish with cilantro.
- Set aside.
Seasoned Paneer
- Let refrigerated paneer come to room temperature. Then, place paneer in warm water for 5 minutes until it softens.
- Slice paneer into long strips.
- Pan fry paneer on medium heat with oil and sprinkle taco seasoning.
- Paneer should be golden brown. Set aside.
Sauce
- In a bowl, whisk together mayo and taco seasoning. Set aside.
Base
- Heat tortillas with oil on medium low heat. It should bubble up and turn brown.
- Once the tortillas are cooked, set aside.
- Place cooked tortilla on a cutting board. Layer on spanish rice, seasoned paneer and sauce.
- Roll up the tortilla like a burrito. Using a pizza cutter, cut in half. Enjoy.
Notes
You can use sour cream or yogurt if you do not have mayo. I have my vegan mayo recipe on the blog. You can use any brand taco seasoning. I used Old El Paso’s Hot & Spicy taco seasoning. Also, you can use whichever brand tortilla or taco sauce you have on hand. I used Mission flour tortillas and Ortega taco sauce. You can use any long grain rice you have on hand.
