Kid Friendly Taco Pizza
This recipe is part of my Back to School series. It introduces kids to Mexican cuisine in a fun way. The main spice used is cumin. It is also a Jain friendly recipe.
Ingredients
- 1 packet Street Tacos Flour Tortillas whole wheat
- 8 oz cream cheese room temperature
- 1 cup Mexican cheese blend shredded
- 1 tsp cumin
- 1 tsp salt to taste
- 1/2 cup black olives sliced
- 1/2 cup corn kernels steamed
- 1/2 cup red or green bell pepper sliced
- 1 tsp olive oil
Instructions
- In a mixing bowl, combine cream cheese, shredded Mexican cheese, salt and cumin.
- Spread olive oil on the tortilla and layer on the seasoned cheese mixture.
- Bake in the toaster oven until cheese has melted.
- Carefully remove from oven and garnish toppings to create a fun, smiley face.
- I used olives for the eyes, corn kernels for the nose and bell peppers for the lips.
Notes
I used Mission brand street tacos tortillas. You can add taco seasoning or salsa if your kids can handle the spice. You can also add in beans, onions, garlic or any other veggies you want. It is a great way to let kids get involved by creating their own taco pizza.
