Fresh Turmeric Pickle (Amba Haldar)
In Gujarati cuisine, this condiment is used with our meals. In Ayurveda, turmeric is a golden spice used for all dosha types. It is an antioxidant used to help digestion, treat nasal congestion, relieve joint pain, boost immunity, eliminate body toxins and is anti-inflammatory.
Ingredients
- 1 cup mango ginger
- 1 cup raw turmeric
- 1 tsp salt
- 2 lemons juiced
Instructions
- Wash turmeric/ mango ginger thoroughly and dry with paper towel.
- Peel and chop turmeric/ mango ginger. I chopped in circles.
- Sprinkle salt and freshly squeezed lemon juice.
- Mix well and let it marinate for up to 48 hours.
- Store in a glass mason jar with lid in the refrigerator for up to one month.
