Eggless Tiramisu
This classic Italian dessert is usually made with ladyfingers (which contain eggs). I decided to make an eggless version using shortbread biscuits and turned out to be a great alternative option.
Ingredients
- 2 packets Walkers Shortbread Finger biscuits
- 8 oz heavy whipping cream cold
- 8 oz mascarpone cheese
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp instant coffee
- 2 tbsp hot water
- 1 tsp cocoa powder garnishing
- wafer cookies optional garnish
Instructions
- Beat heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
- Fold whipped cream into mascarpone cheese. Set aside.
- Mix instant coffee powder with hot water.
- Take each shortbread finger biscuit and dip into instant coffee.
- In a baking tray, line each shortbread finger biscuits and layer on cream mixture.
- Sprinkle cocoa powder on top and garnish with a wafer cookie.
- Chill in the refrigerator for at least 2 hours or until overnight.
Notes
You can find Walkers Shortbread Finger biscuits at Trader Joes along with heavy whipping cream and mascarpone cheese. Make sure your mixing bowl, whisk and heavy whipping cream are all cold. It will help when making whipped cream.
